Raised in Boston, Paul’s passion for wine and food impressed top New England restaurateurs George Germon and Johanne Killeen of Al Forno Restaurant in Providence and Barbara Lynch of No. 9 Park in Boston. His talent and curiosity inspired him to travel to Tuscany where he worked as the personal chef of the Capezzana Estate. While there, he cooked for nobles at a Medici villa in the hills of Florence and opened a small trattoria in the mountains of Northern Italy.
Upon returning to the US, he worked as a sommelier with Mario Batali and Joseph Bastianich at their flagship restaurant, Babbo. During Paul’s tenure, Babbo received the James Beard Award for Outstanding Wine Service.
